Product Introduction
Neutral xylanase FB-X15 is a highly purified xylanase that is a food grade solid enzyme preparation prepared through liquid deep fermentation and purification processes. It can degrade high molecular weight water-soluble arabinoxylan into water-soluble arabinoxylan.

Product Features

Improving the elasticity of gluten network in the dough and reducing the weakening degree of flour can make the internal pores of the dough more uniform and dense, thus improving the internal structure of bread and Mantou;
It can be used as an alternative to emulsifiers or in combination in bread processing.
Recommended dosage
The optimal dosage range of 2-8g/ton flour (2-8ppm) should be determined through baking experiments. Excessive addition can lead to a decrease in dough holding capacity and stickiness. It can be added directly or mixed with other ingredients to the flour.
