Product Introduction
Lipase FB-L15H is a food grade solid enzyme preparation prepared by excellent strains through liquid fermentation and advanced post extraction processes. It can hydrolyze glycerol triacetate to produce diglycerides, monoglycerides, and free fatty acids.

★ Effective pH: 5.0~8.0, optimal pH: 6.0~7.5;
★ Light yellow, well flowing, dust-free particles with a fineness of 100 mesh, inactivated during the baking process.
Product Features
★ Increase the volume and whiteness of bread and Mantou, decompose fat, release pigments dissolved in fat, have greater contact space with oxygen, and the color is oxidized and faded to achieve the effect of secondary whitening;
★ Increase the softness of bread and Mantou, improve the elasticity of gluten network in dough, increase the strength of flour, improve the rapid expansion of bread into the oven, improve the organizational structure of bread ladle, make the core soft and taste better;
★ Can replace chemical brighteners and emulsifiers, combined with glucose oxidase and fungi α - The use of amylase is more effective.

Recommended dosage
The optimal dosage range of 2-10g/ton flour (2-10ppm) should be determined through baking experiments. When in use, it can be directly added or mixed with other ingredients before being added to the flour.
